Tanya has been on her plant-based (vegan) challenge a little over 2 weeks, so I thought it was time to check in! I think she is doing really well, and is enjoying the challenge overall! Here are some questions I asked:
1.What is a new vegan meal you absolutely love?
I'm really enjoying making pizza. I love the hummus and
mushroom, I also love my potatoes with different toppings, salsa or vegan
chilli is real yummy.
2. What three things have been most difficult?
Most difficult.. wanting to use butter, l know that sound silly but l
use it to cook and bake and just to have it on toast..thinking ahead for
meals, I really have to plan ahead which is a good thing..wanting
something sweet, still figuring out what I can have besides Oreos, lol.
3.Are you enjoying Vegan food so far?
I'm really enjoying the food, its a whole new lifestyle and lots of fun
trying new things.
4.What food do you miss the most?
I miss my eggs, cheese, and fish. I use to make the best egg sandwich
lol.
5.What vegan food did you try and not really like? and like?
I tried vegan cheese and to me its was awful! Just didn't taste right
something you would have to get use too for sure or for me just skip it!
What I like a lot is the So Delicious yogurt and almond milk. I was
surprised it was so flavorful.
6. What kind of responses have you received from your friends and family?
All my friends are great support me no matter what, some think I'm
crazy as they could never do it! Family is the same, supportive, my husband
will fix me what ever he can and helps me with ideas but wouldn't want
to eat like that all the time, lol. My youngest loves the almond milk
preferred that over regular milk and my oldest loves that I'm eating
healthier too, as she has now become vegetarian.
7. Do you find there is enough variety of food or has it been difficult?
There are so many varieties, but it has been a challenge for sure, and I'm
still learning. The key is to plan ahead your sneaks and snacks and
always have lots of fruit on hand for easy snacking!
I'm having fun with this challenge and feeling good about what I'm
eating.

I love to stay fit and enjoy all sorts of exercise, hula hooping being one of my favorites! I am a Certified Natural Health Practitioner and a Personal Trainer, I don't promote calorie restricting or over exercising. The body must be fueled and exercise should be a joy and not a chore.
